Vegetables with rice

I have made this rice and vegetable combination a few times when I wanted something quick, warm, and filling, without having to keep a close eye on the pot. It’s the recipe I use when I have leftover vegetables in the fridge or need a hearty side dish, but often I eat it as a main course.
