Meatballs on a bed of vegetables

The first time I tried making meatballs on a bed of vegetables, I forgot them on the stove while sautéing and ended up with half of the vegetables looking a bit brown at the bottom of the pan. No one kicked me out of the kitchen, but they didn’t turn out great on my first attempt, even though people ate them.
