The first time I made this cake, I thought I had completely messed up the layers, I put cocoa in the wrong place and almost forgot the jam. I wasn’t even sure if everything would stick to the pan. Potatoes? In a cake? I looked skeptically at the bowl of mashed potatoes, thinking I was definitely about to ruin something. But I carried on.
