The first time I made this, the bananas turned out a bit mushy. I thought that if I kept them on the heat longer, they would caramelize better, but I ended up with a lovely mush. Now I do it differently, taking my time, and every time I make it, the tart disappears before I can even get the knife out, as it’s already cooled down and eaten.
