Preparation

1. Begin by pouring the apple cider into a medium-sized saucepan. Bring it to a simmer over medium heat. You want to see gentle bubbles, not a rolling boil, which can reduce the cider too quickly and affect the flavor.
2. Once simmering, add the whole cinnamon stick, cloves, and star anise. These spices will infuse the cider as it reduces, giving it that warm, autumn feel.
3. Stir in the brown sugar and maple syrup. The sugar helps thicken the syrup as it cooks down, while the maple syrup adds depth.
